Can I just up grade my stock motor to 35T Brushed motor without replacing the ESC?

I don't see that as a upgrade but yes you can use that motor. I guess your wanting to go slower and know that higher turns in a motor doesn't make it faster right?

Slow build yes. Did not know turns on the motor does not matter for speed. Thank you. I wont wast the money then.

Paycheck to paycheck. Just trying to see what I can do for some easy upgrades on the cheap side to make it a little faster then stock.

Higher turns= slower more torquey motor
Lower turns = faster less torquey motor.
Gearing is the key. You can gear a 35t motor to go as fast as a 20t.
So if you want to go faster without too much cost, changing to a higher tooth count on the pinion will achieve it, but you loose off the line torque. Same works in reverse. This will also change motor temps, higher temps with a bigger pinion as you are working the motor more.
Also a better battery can get you more speed for no changes to the truck.
Just make sure esc can handle whatever battery you choose.
