So the amp rating of the battery plugs confuses me... is it safe the resolder ec3 plugs onto all my lipos for easy swapping? Thanks in advance

Yes. EC3s have a tight fit and make a very good low-resistance connection. If the wire will fit in the EC3 connector's soldering cup, the connector is up to the task.

As @xlDooM said, if the connector fits it's likely good. The more important part is the wire AWG and even then in this application it isn't to much of an issue if it is a little small due to how short the cables likely are.

Any plug other than the old Tamiya plug can handle a 2S LiPo and brushless motor combination easily. Although I remember melting Tamiya plugs back in the 1980's!
