Do you have a brushless motor installed? If so, and it's a sensorless type, this sort of behavior is normal and is commonly referred to as "cogging." You can also switch to a smaller pinion gear to help minimize this effect.
If it is a sensored motor, your sensor wire may have come loose at the ESC or motor. Double-check that the connector is fully seated. Otherwise the sensor wire maybe have become damaged and you'll need to replace it. In my experience sensor wires just seem to "go bad" and don't show any obvious damage. Swap in a new sensor wire and everything is awesome again.
